How to Make This Instant Recipe in Air Fryer

Ingredient Notes

Filet Mignon steaks: Two 8-ounce steaks are needed for this recipe. To avoid stuffing your air fryer to capacity if you intend to make more, prepare them in batches.

Olive Oil: Use of avocado oil is also acceptable.

Salt and Pepper: Give generously; taste!

Butter: temperature-neutral softening. Use vegan butter for dairy-free. Miyokos is, in my opinion, the best vegan butter brand.

Fresh Rosemary & Thyme: Fresh herbs are preferred for this herb butter steak, but if you must use dried herbs, just use 1/3 the amount.

Garlic Powder: If you prefer to use fresh garlic, you can substitute 1 clove minced.

Salt: Use a total of 1/2 tsp if using unsalted butter.

Recipe Step by Step

  1. Prep your Steak: Olive oil should be brushed onto the fillets’ both sides. Sprinkle both sides GENEROUSLY with salt and pepper.
  2. Make your Air Fryer Filet Mignon: For medium-rare, air fry for 10-11 minutes at 400 degrees, for medium, 11-12 minutes at 400 degrees, for medium-well, 11.5-13 minutes at 400 degrees, and for well done, 14 minutes at 400 degrees. Check the internal temperature of the meat using a meat thermometer: 120° for rare, 130° for medium-rare, 140° for medium, 150° for medium-well, or 160° for well-done.
  3. Rest: Serve the filets with a slice of garlic-herb butter after allowing them to rest for three to five minutes. Enjoy!

Garlic Herb Butter

  1. Soften the Butter: Allow the steaks and butter to acclimate for about 30 minutes.
  2. Make the Butter: Use a fork to thoroughly blend the butter with the salt, rosemary, thyme, garlic powder, and oil in a bowl. Onto a sheet of parchment paper, transfer the butter. In order to completely enclose the butter, roll the paper while forming it into a log. While preparing the steaks, keep the butter in the fridge.

Tips & Tricks

Dairy Free: Use vegan butter like Miyoko or Earth Balance to make this recipe dairy-free if necessary. Feel free to use ghee in place of the butter if you’re Whole30.

Batches: Making your steak in batches will prevent your air fryer from becoming too crowded if you need to double the recipe. For additional batches, follow the same instructions.

How Long to Cook Filet Mignon in the Air Fryer?

The thickness of your steaks and the air fryer temperature will affect how long your filet mignon takes to cook in the air fryer. For 1.5-inch steaks, I advise cooking at 400 degrees F. Use the time chart below to estimate the cook times based on your preferred level of doneness.

For filets that are about 1 ½-inches thick, the cooking times are as follows:

  • Rare: 10 to 12 minutes, or 120°F (52°C)
  • Medium-rare: 11 to 13 minutes, or 130°F (54°C)
  • Medium: 12 to 14 minutes, or 140°F (63°C)
  • Medium well: 13 to 15 minutes, or 150°F (66°C)
  • Well-done: 14 to 16 minutes, or 160°F (71°C)

Use a probe thermometer to get a perfect filet every time. You can set it to the temperature you want, insert it before cooking, and it will beep when the steak is done. If you don’t have one, you can also use a regular instant-read thermometer and check on it.

The final steak temperature will rise by another 5 degrees F while resting.

Storing & Reheating

If you have leftovers, store the steak in your fridge, wrapped in foil or in an airtight container for up to 3 to 5 days!

You can freeze leftover filet mignon if you like! Wrap the steak well in plastic cling film, then transfer to a freezer storage bag and freeze for up to 3 months! In the refrigerator, thaw before reheating.

  • Store: For two to three days, store leftover filet in the refrigerator.
  • Reheat: Use the low-temperature oven technique with broth that I describe for reverse-seared steak for the best results, or simply warm the steak briefly in a hot skillet. Not advised: microwaving.
  • Freeze: Before air frying (or cooking it in any other way), if at all possible, freeze filet mignon raw. If necessary, you can freeze cooked steaks for 3–4 months, but they won’t be as tender after thawing and reheating, so it’s best to use them in soups or in a salad with dressing.
