Our air fryer is one of our favorites because it produces the best chicken wings, fried pickles, and churros. These Potatoe Wedges are one of our favorite things to make in it!

A very short list of ingredients goes into making these air fryer wedges, but they are packed with flavor. You will need:

Russet Potatoes: be sure to rinse and clean well before slicing. You can peel them, but it’s not necessary. It really depends on your personal preference.

Avocado oil or Olive oil: helps the seasonings stick and allows the exterior to get nice and crispy.

Spices: we’ll use a simple blend of salt, black pepper, garlic powder, and paprika to give these potato wedges just the right amount of flavor. Add a frac14th of a teaspoon of cayenne powder if you like it hot.

Grated Parmesan Cheese: optional but highly recommended and adds a delicious, salty-nutty flavor.

Fresh Parsley: for garnish, if desired.

Seasoning Variations

  • Indian: toss the potato wedges in a blend of Indian seasonings.
  • Italian: use Along with the seasonings already mentioned, add Italian seasoning.

Here are the step-by-step instructions on how to cut a potato into wedges. To ensure even cooking and full cooking, make sure all of your wedges are roughly the same size.

  • Potatoes should be cut lengthwise.
  • Take each potato half, cut side down, and slice in half again.
  • Now cut each potato quarter in half at a 45 degree angle such that each wedge is about ½-inch thick. If your potato is bigger, cut each quarter into thirds.

Prep potatoes: After soaking the potato wedges in ice-cold water for 20 to 30 minutes, drain and wipe them dry.

Add the seasonings: The potato wedges should be thoroughly coated after being mixed with 1 tablespoon of oil and the spices in a big bowl.

Air fry: Spend two minutes getting your air fryer to 380°F. Put the wedges in the air fryer basket in a single layer and cook for 10 minutes, shaking the basket halfway through.

Add cheese: Remove the basket, add the wedges to the same mixing bowl, and add an additional tablespoon of oil and parmesan cheese (if using).

Air fry again. Put the wedges back into the air fryer basket in a single layer and cook for an additional 8 to 10 minutes.

The potatoes will become crispier if you soak them in cold water. In a bowl, combine potatoes with 2 cups of ice cubes and cold water. Allow them to soak for at least 30 minutes before using paper towels to pat them dry.

How Do You Cut Potatoes into Wedges?

Use a chef’s knife to cut the potato in half lengthwise. After that, slice it again in half to create quarters, placing the cut side down on the cutting board.

To reheat, thaw them first in the fridge (if frozen), then air fry again at 380F for 2-3 minutes or until heated through and crisp.
